Nguyên Liệu

Chim câu non (2 con) 1/2 lb
Hạt sen 40g
Nấm hương 10g
Hành khô 20g
Mỡ nước 30g
Hành lá 30g
Nước mắm
Muối
Ḿ chính
Hạt tiêu

Cách Làm

Chim mổ moi, cắt bỏ 2 chân, sát tiêu, muối, hành (bằm nhỏ) vào bụng chim. Lau khô da chim, cài đùi vào bụng.
Nấm hương ngâm nở, rửa sạch, to th́ cắt đôi, nhỏ để nguyên. Hành lá rửa sạch cå't khúc dài khoảng 1 lóng taỵ Hạt sen bóc vỏ, thông tâm. luộc chín.
Hành khô bóc vỏ nhỏ để nguyên, to cắt đôị
Đung mỡ nóng, cho chim vào rán qua, xếp vào tộ Xếp hành củ, hạt sen, nấm hương phủ kín chim, thêm 200ml nước sôi có pha nước mắm và ḿ chính (hoặc nước dùng), đậy nắp kín rềi đem chưng cách thủy tới khi thịt chim và hạt sen chín mềm là được. Rắt tiêu và hành trần lên.
Ăn nóng.
