Shrimp
Paste (Tom Chua)
Nguyên Liệu
- 500g of medium - sized shrimps (keep unshelled,
uncooked)
- 1/2 tin of glutanuous rice
- 5 gloves of garlic
- 10 big hot ret pepper
- 4 teaspoons of chilli-powder
- 4 teaspoons of salt
- 5 tablespoons of rice alcohol, 4 garlingales
- Some water with 3 teaspoons of salt dissolved in
- Some other water with a tiny piece of alum dissolved in
Cách Làm
- Cut of the beards, tails and take the eyes and
viens out of the shrimps. Soak them in salt water for some minutes. Then clean
them with the alumđissolved water. Stand the shrimps dry then place them in
a large bowl. Ađ in the salt then shake slightlỵ Pour the rice
alcohol in and press the mixture tightlỵ
- Cook the glutinuous rice well
- Slice the hot peppers, the garlic and the galingales into shreds. Pour them
into the bowl of shrimps. Ađ in the chilli powder. Mix them altogether.
- Put the ingredient into a clean jar. Put some galingale leaves on then press
as tightly as possible: set some galingal sterns on
- Keep the ingredient for a week to be wellđone before serving
