In a small sand pot or heavy-bottomed pot, heat the
oil over low heat. Increase heat to medium-low, add the scallions,
garlic, and ginger, and stir-fry until fragrant, 3 to 5 minutes. Add
the chicken stock, thin and thick soy sauces, sugar, and eggs and
simmer until the eggs are a rich golden color, about 15 minutes. |
