Chicken
Liver and Pork puff

Serves 6:
1 1/2 lbs chicken livers
1 lb. pork meat
2 eggs, lightly beaten
4 tablespoons chopped onion
1/3 cup canned sliced mushrooms
2 teaspoon salt
1/2 teaspoon black pepper corn

Grind chicken livers and pork meat in a grinder.
Mix all ingredients together. Then wrap the mixture and bake
Vietnamese people use banana leaves or lotus leaves to wrap the mixture in small
puffs (about 1 cup) before steaming. We usually serve it with a special kind of
rice cake (banh trang). When served, the cake must be grilled over charcoal. In
America, it is sometimes difficult to find the rice cake, so Triscuits or
Toasted Matzos can take its placẹ
Banana and lotus leaves are hard to find in America too, so one can use aluminum
foil and waxed paper for wrapping.
Use 10 to 12 pieces foil 6" x 6" and 10 to 12 pieces waxed paper

Fold foil diagonally, spread it in flat counter; put in its center 3 to 4
tablespoons of the mixture, wrap to make small puffs. Repeat process to make 10
to 12 puffs. Bake at 350 F in the oven for 30 min. Spread waxed paper, put each
puff in the center of each piece of waxed paper, twist edges to closẹ Beat
4 egg white stiffy with salt and brush over waxed paper. Place in low heat oven
for 15 min. Serve hot.
