Rice
Noodles sauteed with meat and mixed vegetable

Use 3 cups dry rice noodles for 6 servings.
Dry rice noodles are available at Chinese grocery stores. Soak dry rice noodles
in hot water 20 min before cooking. Cook for 5 to 10 min and drain in hot water
to remove the starch.
Saute cooked rice noodles in 3 tablespoons oil.
2 lbs pork tenderloi, cut in cubes or minced
1 garlic clove, minced
1 tablespoon soy sauce
1/3 cup soup stock
Vegetables, about 2 cups:
Onions cut lengthwise
Cucumbers cut diagonally
Tomatoes cut in quarters

Season the meat with garlic, salt and soy

vegetables slightly in 2 tablespoons oil. Remove from pan. Heat pan again, ađ

cornstarch. Ađ vegetables just before servings.
Transfer sauteed rice noodles into a serving platẹ Pour over them sauteed
meat and vegetables. Serve hot.
