Salad
of Pork and Vegetables in Hue Style

- 1 small flower of banana tree
- 25g of dried cat-ear mushrooms
- 150g of boiling lean pork
- 1/4 chicken
- 1 slice of steamed grilled pork (about 200g)
- 1 small cucumber
- 3 pieces of rice noodle
- 1/3 tin of peanut
- 1 rice pancake
- 1 lemon
- 1/4 bowl of nuoc mam
- 1/3 bowl of water
- 2 hot red peppers and 2 poireaux (cut into flower shapes)
- 50g herb and white fungus
- 150g of medium-sized shrimps
- 1 small carrot
- 1/5 ripe pineapple
- 1/3 tin of sesame
- 1 cloves of garlic
- 4 teaspoons of sugar
- 1/4 teaspoon of monosodium glutamate
- 3 hot red peppers
Cách Làm
1. Make the sald as following:
- Cut the cucumber and the carrot into shreds of 4cm in length. Ađ some
salt in and squeze the shreds slightlỵ Clean them with water and make
drỵ
- cut the pineapple into short lengths. Extrack the juice from it to make sweet
and sour "nuoc mam".
- tear the boiling chicken and the boiling pork into shreds. Cut the
steamed-grilled pork into thin shreds
- Stream the shrimps. Remove the covers and heads except the tail
- Boil the dried cat-ear mushrooms and slice them into shreds
- Soak the fungus for a while then separate every ears from the fungus
- Cut the flower of banana into thin slices. Clean it with water then mix herb
with it.
- Slightly boil the rice noodle
- Fry the peanuts and sesame then grind (pound) them
- Broil the rice pancake (bánh tráng) then break them into fragments
2. Make the sweet and sour "nuoc mam"
- Hash the hot red pepper and the garlic
- Ađ in the lemon juice, the pineapple juice, some sugar, a little MG
- Drop in the seasoning "nuoc mam" until it becomes tastỵ (This
nuoc mam should taste sour, sweet and a little salty)
3. Garnish the dish as following:
- Place the vegetables in the miđlẹ
- Other parts of the ingredients are put around
- Place the shrimps around as a contour
- Top the dish with red-pepper and poireaux trimmed in flowershape
- Peanut, sesame and fragments of rice pancake are displayed in a separate plate
- When serving the dish, pour in the "nuoc mam", peanut, sesame, and
rice pancakẹ Mix them altogether
