Lẩu mắm



VẬT LIỆU VÀ CHUẨN BỊ (Ingredient And Preparation)
500gr xương heo, rửa sạch
- 1 con cá lóc (900gr), làm sạch, thái khúc
- 150gr mắm sặc (hoặc mắm cá linh, mắm lóc)
- 200gr tôm tươi, bóc vỏ, bỏ chỉ đen
- 300gr mục tươi, làm sạch, khứa váy rồng, thái miếng
- 200gr thịt quay, thái miếng
- 1 quả cà tím, thái khúc
- 4 muỗng sả băm
- 2 muỗng ớt xay
- Muối, tiêu, đường

CÁCH LÀM VÀ TRÌNH BÀY (METHODS)
- Hầm xương heo với 2 lít nước, vớt ra, cho mắm vào tiếp tục nấu, lọc lấy nước
- Ướp cá với ít tiêu, muối, đường.
- Dầu nóng, cho cá vào xào sơ
- Tôm hấp chín
- Mực trụng sơ với nước dấm
- Cho sả, ớt, cá lóc, cà tím vào nồi mắm, để lửa liu riu

* Trình bày:

Cho mắm vào bát, cho tôm, mực, thịt quay lên trên. Dùng nóng với bún sợi to, rau ghém, chanh, ớt
