Beef and Pork Leg Soup (Bun Bo Gio Heo)

INGREDIENTS:
8 cups lightly salted water 1 pound beef brisket 12 ounces leg of pork, cubed
1 stalk lemongrass, bruised 1 tablespoon shrimp paste salt
pepper 1 tablespoon annatto seeds 2 tablespoons vegetable oil
10 shallots, thinly sliced 1 stalk lemongrass, finely chopped 2 red chilies, finely sliced
1/4 cup finely cut ngo gai (saw-leaf herb) leaves 1 pound fine rice noodles 1/4 cup finely cut baby leeks or spring onions
1/2 cup sliced or shaved banana blossom 1/2 cup bean sprouts 1/4 cup finely cut mint leaves
juice of 2 limes    


1 In a large soup pot, bring salted water to a boil. Add beef, pork and bruised lemongrass. Reduce heat and simmer for 90 minutes (or until meat is tender). Remove lemongrass and discard. Remove beef, cut into cubes and set aside. To the stock, add shrimp paste, and salt and pepper to taste. Simmer until needed.
2 Saute the annatto seeds in oil, until the oil turns a light reddish color, then strain and discard the seeds. Reheat the oil and saute the shallots until fragrant. Add chopped lemongrass and 1 of the chilies. Continue to saute for a few more minutes, then add mixture to the stock with most of the ngo gai leaves.
3 Blanch rice noodles for 10-15 seconds, then place them in a large bowl. Top with beef, pork, baby leeks and the remaining ngo gai leaves. Pour in the hot soup broth.
4 Serve with banana blossom, bean sprouts, mint leaves, the remaining chili and freshly squeezed lime juice.
