Clean pork in water with baking soda and boil in
lightly salted water until thoroughly cooked. When cool, cut into
1-1/4 inch pieces and rinse with cold water. Combine vinegar, sugar
and salt, bring to a boil, then remove from heat and allow to cool. |

Place pork in a jar, add crushed garlic, chili,
peppercorns and ginger. Cover with liquid and seal the jar. Let set
for a few hours. |

When the pork is white and crunchy (you should taste
to determine when the tewture is right), and a little bit sweet and
sour, it is ready to eat. Finely slice the meat, add garlic and toss
well in a bowl. Garnish with cilantro leaves and red chili shreds. |
