| INGREDIENTS: |
| 6 ounces top beef round, in 1 chunk
(3x1-inches) |
sprinkling of freshly ground black pepper |
1-1/2 teaspoon fish sauce |
| 2 cloves garlic, minced |
6 ounces broccoli florets with 1-1/2 inches
of stem attached |
1 stalk celery |
| 1 teaspoon oyster sacue |
1 teaspoon cornstarch |
1/2 teaspoon thin soy sauce |
| 1/2 cup plus 1 tablespoon water |
1-1/2 tablespoons vegetable oil |
2 shallots or white part of 2 scallions,
chopped |
| 1 large tomato, cut into 8 wedges |
1/2 large onion, cut into 3 wedges and
segments separated |
1 green pepper, cut into 1-1/2 inch squares |

Slice the beef paper thin, across the grain. Sprinkle
with black pepper, 1/2 teaspoon of the fish sauce, and half the
chopped garlic. Slice broccoli through florets and stem lengthwise,
into thin slices. Slice the celery stalk very thin, on the slant. |

Combine the remaining 1 teaspoon fish sauce, the
oyster sauce, cornstarch, soy sauce, and the 1/2 cup water and set
aside. |

Preheat a frying pan and add the oil. When the oil is
hot, add the remaining garlic and the shallots. Stir for about 1
minute, then add the meat. Keep stirring for another minute; add the
broccoli and the 1 tablespoon water, then stir, cover, and cook for
about 3 minutes. Uncover and add the tomatoes, onion, green pepper,
and celery. Stir. Add the oyster sauce mixture. Cook for 5 more
minutes and serve at once, with rice and fish sauce. |
