Stuffed Squid (Muc Nhoi Thit)

INGREDIENTS:
10 medium washed and cleaned squid. (Use the tentacles in the stuffing mixture and save the sacs for stuffing) STUFFING: 1 tablespoon peanut oil 3 tablespoons finely sliced shallots
1 clove garlic, finely sliced 1 pound lean leanground pork 1/4 cup cellophane noodles
6 wood ear mushrooms, finely chopped 1 teaspoon five-spice powder 1 tablespoon soy sauce
10 sets of squid tentacles, finely chopped SEASONING: pinch salt pinch pepper
1 teaspoon sugar SAUCE AND GARNISH: 1/4 cup diced shallots 3 cloves garlic, crushed
1/4 cup butter or oil 3 large tomatoes, peeled, seeded and chopped salt and pepper
cilantro leaves fresh ground pepper  


1 For the stuffing, heat oil in pan, add shallots and garlic, cook, stirring until soft. Combine shallot mixture with the other stuffing ingredients in a bowl and mix well. Add seasoning. Stuff the squid sacs with the mixture and secure with a small toothpick.
2 To prepare the sauce, saute shallots and garlic in butter until soft. Add stuffed squid and saute on both sides for about 10 minutes or until slightly browned and cooked through. Remove from pan, set aside and keep warm. Add tomatoes, salt and pepper to taste to the pan, and simmer until the tomatoes have been reduced to a thick sauce. Place squid on a large platter and remove toothpicks. Pour the tomato sauce over the squid. Garnish with cilantro and fresh ground pepper.
3 HELPFUL HINTS: When serving, you can leave the squid whole or cut into more manageable pieces. For a variation on the cooking technique, try grilling the squid.
