Vietnamese fried Spring Roll "chả giņ"

Vietnamese "chả giņ" are pastries filled mostly with rice noodles, ground pork, and julienned vegetables (such as cabbages, carrots, wood ear fungi or taro). The ingredients vary between the regions. The filling is wrapped in a thin, rice paper wrapper, and is fried. Vietnamese spring rolls are typically thinner than the Chinese versions. Vietnamese spring rolls are usually accompanied by prepared fish sauce (mixture of lime juice, fish sauce, sugar, garlic and water), mint leaves, and lettuce.
